The countdown to Christmas has started and what better way to mark the festive season than by sharing one of Zimbabwe’s favourites, Amarula, the Spirit of Africa? This Christmas, spoil yourself with some exciting Amarula treats — when you have used the Amarula as an ingredient in the dish, enjoy the rest of the bottle in cocktails, or just savour it the traditional way — Amarula on ice!

Amarula Ganache and Bananna Spring Rolls Makes eight spring rolls, serves four. Ingredients 200g milk chocolate, broken into small pieces 90ml cream 60ml Amarula 2 bananas 1 egg 8 sheets of spring roll pastry or 4 sheets of phyllo pastry Oil for deep-frying Ice-cream and crushed peanut brittle for serving (optional) Method Amarula ganache

  •  Place the chocolate and Amarula in a small bowl.
  •  Bring the cream to the boil and immediately pour it over the chocolate and Amarula. Stir until the chocolate has dissolved completely and the mixture is smooth and shiny.
  •  Place the bowl in the fridge to chill.

Spring rolls If you are using spring roll pastry, it will already be divided into individual sheets ready for rolling. Phyllo pastry sheets are bigger and will need to be cut in half so that you have two square pieces approximately 30cm x 30cm in size.

  • Crack the eggs into a bowl and whisk.
  •  Peel the bananas and cut them in half lengthways and then width ways.
  • Place a tablespoon of ganache across the pastry (as shown), then top with a piece of banana.
  •  Follow the diagrams to finish rolling the spring rolls and seal them shut.
  •  You can either deep-fry the spring rolls in very hot oil, until golden brown or you can bake them the oven at 180°C until golden brown.
  • Serve with ice-cream of your choice and sprinkle with some crushed peanut brittle.

To use up the leftover Amarula Amarula Martini Ingredients 30ml Amarula 15ml Gilberts Gin 1,5ml Pellegrini bitters Lemon zest Ice cubes Method

  • Add the Amarula, gin and bitters to a cocktail shaker, blender or sealed container and insert a few ice cubes.
  •  Mix well, pour into a martini glass and garnish with a twist of lemon zest.

*To cool the glass ahead of time, fill with ice cubes and remove before pouring in the cocktail mixture.
