So last week I promised you I would share with you some cooling iced tea recipes. Not a lot of people like drinking iced tea. I was in that category too some time ago, until I tried some store bought Liptons tea.

Being cautious, I tried the lemon flavour first, because I’ve always drank the hot tea with lemon so I thought it made sense.

It was love at first drink……. I then tried the other flavours like strawberry, blueberry and ginger. I must say I still find it difficult to choose my favourite flavour between lemon and ginger. Perhaps one of these days I’ll do a fusion of the two, hoping it won’t become a concoction of some sort.

So iced tea……..where did this come from? Someone thought they wanted to have tea on a hot October day but they didn’t want to have to sweat, so they thought, why not try it cold with ice. And that’s my story and I’m sticking to it!

As the temperatures are indeed getting higher, I hope you will be able to try this iced tea recipe with friends on a nice hot day. You can keep it in the fridge for a day or two. Don’t keep it too long in the fridge otherwise it will no longer be fresh.

I prefer making iced tea with rooibos tea. in fact I pretty much don’t like any other tea, hot or cold that’s not rooibos.

Iced Tea

Ingredients

6 cups boiled water

2 rooibos tea bags

Handful mint leaves

3 tablespoons honey

2 lemons sliced

1 cup ice cubes

Method

In a large heatproof pitcher or teapot pour the hot water over the tea bags. Brew for about 5 minutes (just cover the pitcher or teapot and let it stand).

Remove the tea bags and add the honey, mint leaves and lemon slices. Stir well. Add the ice and serve in glasses.

It’s as easy as that! For other variations, you can add fresh grated ginger but make sure to strain the tea before serving to eliminate the grated ginger pieces. You can also add sliced strawberries for a variation of strawberry iced tea.

You can try a lot of different flavours as long as you have fun and enjoy a nice cool drink.
